INGREDIENTS (makes 4 portions):
2 x tins tuna
1 x tin mixed beans (in water)
1 x small tin sweetcorn
1 x bag fresh green beans
2 x tbsp. extra virgin olive oil
1 x tbsp. white wine vinegar
1 x tbsp. wholegrain mustard
Steam or microwave the green beans for a couple of minutes – until slightly softened but still with a bite. Rinse immediately in cold water to stop them cooking any further, then dry and cut into thirds.
Drain the tuna and all the tins of beans and corn and mix together with the green beans in a large bowl.
Whisk the oil, vinegar and mustard together and drizzle over the tuna and beans.
Mix well until everything is coated in the dressing, and season with a little black pepper to serve.
