Eggs are the best breakfast as protein will keep you feeling full all morning.
You can scramble eggs in the microwave in just seconds, and adding a little smoked salmon feels like such a treat for a mid-week breakfast!
Buy a large pack of smoked salmon and cut it into portions about the size of a playing card.
These portions can be wrapped in cling film and frozen until you need to use them – great value, quick and easy.
INGREDIENTS (serves 1):
2 x free range eggs
1 x portion of salmon (see above)
1 x slice rye or sour dough bread
Salt and pepper to taste
Fresh dill to serve (optional)
Slice the salmon into small pieces – this can be done from frozen
Crack the eggs into a bowl and whisk well, season with pepper
Microwave the eggs for 30 seconds, then mix really well
Add the salmon, frozen or chilled, and stir in
Microwave for a further 10 seconds at a time, stirring well each time
Take care not to over-cook the eggs – better to stop cooking whilst still quite wet at the continue to cook a little afterwards
Serve on top of your choice of rye/sourdough bread or toast, sprinkled with dill if desired.
Voila – a breakfast of kings!!
