Here it is served with seeded protein bread, which contains a whopping 27g of protein per roll and is available from Lidl for just 29p!
INGREDIENTS (serves 4)
1 1/2 tsp olive oil
1 onion, finely sliced
1 fennel bulb, finely slied
4 garlic cloves, peeled and crushed
1 tsp root ginger, finely grated
1 red chilli, finely chopped
generous pinch saffron threads
1 tsp paprika
1 400g tin chopped tomatoes
1.25l fish or vegetable stock
1 tsp caster sugar
1 bay leaf
400g white fish, cut into cubes
8 large raw king prawns
salt and pepper
handful flat leaf parsley
lemon juice to taste
Heat oil in a large pan on a medium heat, and the onion and fennel and cook, sitrring occasionally, for about 5 minutres until softened but not brown.
Add the garlic, ginger, chilli, saffron and paprika and cook for a further 2 minutes.
stir in the tomatoes, stock, sugar and bay leaf and mix with a wooden spoon
Season ans simmer for 20 – 25 minutes.
gently lower the fish, mussels and prawns into the soup and cook for just 2 – 3 minutes.
Check the seasoning, scatter with hte flat leaf parsley and add a squeeze of lemon juice to taste.
