Drink your greens! This is a fab way to get through your five a day. It’s the quickest soup recipe ever to make, and it tastes so fresh and is amazingly bright in colour – a saintly lunch that can be whipped up in minutes.
INGREDIENTS (serves 1):
100g frozen peas
3 large handfuls fresh spinach
1/2 tsp dried onion granules
100ml vegetable stock
Pepper to serve
1 tsp. Greek yoghurt (optional)
Put all ingredients except the yoghurt in a blender and blitz until smooth.
Add salt/pepper to taste, and top with a dollop of Greek yoghurt if you prefer a creamier texture.
And it really is as simple as that!
