Mackerel is a great source of omega 3 too, which helps boosts brain power and concentration.
An easy last minute lunch or dinner.
INGREDIENTS (serves 1):
1 x peppered mackerel fillet
1 x small fresh beetroot
1 x tsp. horseradish sauce
1 x wholemeal pitta
chop the beetroot in quarters and place in a plastic tub with 1 tsp. water. Cover, and microwave for 3 minutes or until soft. Drain and leave to cool.
Toast the pitta lightly until it puff out, then slice it open taking care of the hot air inside it!
Lay the pitta out under a grill and toast for a further couple of minutes until it starts to crisp and turn golden.
Remove from the heat and spread with the horseradish sauce.
Shred the mackerel and divide across the two pitta halves.
Slice the cooked beetroot and spread this over the mackerel.
Place the loaded pittas back under the grill for a final 2 minutes.
Serve your pittas with a nice fresh crisp leaf salad.
