No more need to succumb to the chocolate hobnobs mid-afternoon…these flapjacks are a delicious energy boosting treat, containing zero refined sugar, and full of slow-release carbs and healthy seeds. Happy Snacking!
INGREDIENTS (makes 6 – 8 bars):
280g porridge oats
3 tbsp. ground flaxseeds
1 tbsp. pumpkin seeds
1 tbsp. goji berries (or raisins)
3 tbsp. chopped dates
3 tbsp. peanut butter (choose one with no added salt or sugar)
4 tbsp. coconut oil
2 tbsp. honey
1/2 ripe banana, mashed
Pinch of salt
Oil for greasing
Preheat the oven to 180c/gas mark 4 and lightly grease a 23cm baking tin.
Melt the honey coconut oil and peanut butter gently in a large pan.
Remove from the heat and add the mashed banana.
Add all the other ingredients, and stir together well to form a sticky mixture.
Press the mixture firmly into the prepared tin.
Bake for 12-15 minutes, or until golden brown. Allow to cool completely before cutting into bars.
Stored in an airtight container they will keep for up to a week, or you can freeze them if you think there’s any way you could resist them for longer!
