Chia is a fab energy source and acts as a thickener, giving a really interesting texture to this recipe

INGREDIENTS (serves 1):
2 tbsp. chia seeds
100ml coconut milk
1 large handful fresh or frozen mango cubes
3 tbsp. plain Greek yoghurt
1/2 scoop vanilla protein powder
1 tsp. desiccated coconut
Place the chia seeds in the bottom of your dish along with the coconut milk, stir well and leave to rest for 10 – 15 minutes, stirring occasionally.
In a separate bowl mix together the yoghurt, protein powder and desiccated coconut.
Once your chia mix has started to thicken and set you can top with the mango and leave in the fridge to cool.
When you are ready to serve, pour the coconut protein yoghurt over the top and enjoy.
