Take five minutes to prepare the night before and you can enjoy a delicious healthy breakfast in less time than it takes to serve your normal toast and jam.
It will last for a few days in the fridge so double up the recipe if you want to be ready for a week of speed-brekkies
INGREDIENTS (makes 2 portions):
60g rolled oats
100g plain yoghurt
60g fresh or frozen blueberries
30g dried cranberries
50g flaked almonds
Almond milk (or regular milk) to mix
1 tsp cinnamon
2 tsp honey (optional)
Combine all the dry ingredients and mix well.
Stir in the plain yoghurt until everything is coated.
Add the nut or cows milk a little at a time, until the mix is a pouring consistency.
Taste the mix and add the honey if you prefer it sweeter.
Place the oats in the fridge where they will soak up the liquid and flavours and thicken overnight.
Serve straight from the fridge, sprinkled with a few extra almond flakes and blueberries if desired.
